Firm green olives, naturally fermented before being carefully pitted and packed in a light brine infused with thyme, shallot and lemon. The thyme is earthy and fragrant, the shallot gently savoury and the lemon fresh enough to lift the whole jar.

Cold brining preserves the olives’ natural crunch and clean flavour. They are unpasteurised and conveniently pitted, ready to eat or add straight to whatever you are cooking.

Serve them with grilled chicken or fish, fold them through a warm potato salad or add them to couscous and roasted vegetables. They are also very good eaten cold with cheese, bread and something crisp to drink.
