Rich Kalamata olives, preserved lemons and capers come together in this bright, savoury tapenade. Made with Extra Virgin Olive Oil, garlic and a little Dijon mustard, it balances the depth of the olives with the fragrant sharpness of preserved lemon.

Spread onto warm toast and finish with ripe tomatoes, spoon through white beans, or stir a little into thick yoghurt for a dip. It is particularly good spread over lamb before roasting, or tucked beneath the skin of a chicken, where the lemon and olive flavours mingle with the cooking juices.
