Garlic has been valued in kitchens and traditional diets for centuries. Pickling softens its raw ferocity, leaving the cloves crisp, gently tangy and surprisingly mild. They are very easy to eat straight from the jar while deciding what supper might be.

Set them beside olives, cheese and cured meats, or tumble them through salads and warm grains. Tuck a few around roast lamb or chicken, add them to a tray of aubergines, peppers and courgettes, or stir them into a casserole towards the end of cooking.
