Fermented jalapeño chillies bring a clean green heat, while preserved lemon and parsley keep everything lively. Extra Virgin Olive Oil gives the sauce body and richness without dulling its freshness.

Spoon it over grilled fish, prawns or chicken. Brush it onto courgettes and peppers as they come from the barbecue, stir it through yoghurt for a quick sauce, or use it to brighten roasted vegetables and marinades.
