Beetroot gives this dressing its deep colour and natural sweetness, while thyme brings a savoury fragrance and ginger adds a little warmth. Made with Extra Virgin Olive Oil and wine vinegar, it has enough sharpness to keep everything bright and balanced.
Pour over leafy salads, roast roots and warm potatoes, or serve with goat’s cheese, smoked salmon or mackerel. A spoonful stirred into hummus or yoghurt makes a particularly colourful dip.
