A lively mixture of pitted green and Kalamata olives, naturally fermented and packed in a light brine infused with fennel and orange. The orange brings freshness and a gentle sweetness, while the fennel adds a soft aniseed warmth.

Cold brining preserves the firm bite of the green olives and the deeper, richer character of the Kalamata. They are unpasteurised, full of natural flavour and conveniently pitted for eating or cooking.

Serve them cold with drinks, add them to crisp salads or put them alongside grilled fish, prawns and soft cheese. Their bright flavour is particularly welcome when the rest of the table is rich or deeply savoury.
